云南香蕉叶烤鱼饭

fresh river fish (e.g., tilapia or carp), cleaned and scaled
butterflied
soy sauce
Shaoxing wine or dry sherry
minced ginger
garlic, minced
spring onions, chopped
green parts only
red bird's eye chilies, finely chopped

large banana leaf
softened over flame or in hot water

In a bowl, mix soy sauce, Shaoxing wine, ginger, garlic, spring onions, chilies, fish sauce, sugar, and white pepper to make a marinade.
Make shallow cuts on both sides of the fish. Rub the marinade all over the fish, inside and out. Let marinate for 15 minutes at room temperature.
Preheat a grill or grill pan to medium-high heat. Lightly oil the banana leaf and place the fish on it. Fold the leaf over to enclose the fish, then secure with toothpicks if needed.
Grill the wrapped fish for 10-12 minutes per side, until the fish is cooked through and the leaf is charred in spots. Alternatively, bake at 200°C (400°F) for 20 minutes.
Unwrap the banana leaf carefully. Serve the fish on the leaf alongside warm rice and blanched vegetables. Garnish with fresh coriander and mint.
