台州芝麻饼
Flaky, golden pastries studded with toasted sesame seeds, a beloved street snack from Taizhou, Zhejiang. These pastries are made with a lard-based dough and filled with a sweet or savory filling, then baked until crisp.

In a large bowl, mix flour and cold lard until crumbly. Gradually add ice water, mixing until dough forms. Knead briefly, cover, and rest for 20 minutes.
Divide dough into 8 equal balls. Roll each ball into a thin oval, then roll up tightly like a log. Coil the log into a snail shape, flatten slightly. Repeat with all pieces, then cover and rest 10 minutes.
For sweet filling, combine sugar, toasted sesame seeds, and chopped peanuts (if using). For savory, omit sugar and add salt and five-spice powder to taste.
Flatten each dough piece into a 4-inch circle. Place 1 tablespoon filling in center, gather edges to seal, and pinch closed. Gently flatten into a disc.
Brush each pastry with oil, then press one side into additional sesame seeds to coat. Place seed-side up on a parchment-lined baking sheet.
Bake at 375°F (190°C) for 20-25 minutes, until golden and crisp. Serve warm.
