In a large bowl, combine all marinade ingredients: ground cumin, chili flakes, paprika, Sichuan peppercorn powder, white pepper, salt, vegetable oil, soy sauce, Shaoxing wine, garlic, ginger, and onion. Add yogurt if using. Mix well.
Add lamb cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 4 hours, preferably overnight, to allow flavors to penetrate.
Soak bamboo skewers in water for at least 30 minutes to prevent burning. If using metal skewers, no need to soak.
Preheat grill to medium-high heat (or prepare a charcoal grill).
Thread marinated lamb cubes onto skewers, leaving a small space between each piece. Press tightly together to prevent drying.
Grill skewers for 3-4 minutes per side, turning occasionally, until lamb is browned on the outside and cooked to your desired doneness (medium-rare to medium). Baste with melted butter or oil while grilling to keep moist.
Remove from grill and immediately sprinkle with additional cumin and chili powder. Garnish with cilantro if desired.
Serve hot, straight off the grill, as a street-style snack or appetizer.
