Chinese sausages (or hot dogs)

soy sauce
rice vinegar
sugar
chili sauce

In a small bowl, mix soy sauce, rice vinegar, sugar, and chili sauce (if using) to make the sauce. Set aside.
Heat a large non-stick skillet or griddle over medium heat and add vegetable oil.
Place one cold noodle sheet on the skillet and cook for 1 minute until it softens.
Crack one egg on top of the noodle sheet and spread it evenly with a spatula. Cook for 1-2 minutes until the egg is set.
Flip the noodle sheet with the egg side down and cook for another minute.
Brush the sauce over the noodle sheet and add sliced sausage, green onions, and sesame seeds.
Roll up the noodle sheet tightly using a spatula and transfer to a plate. Repeat with the second sheet.
Slice the rolls into bite-sized pieces and serve hot.
