In a small bowl, mix soy sauce, rice vinegar, sugar, chili sauce (if using), and sesame oil. Set aside.
Heat a flat griddle or non-stick pan over medium heat and add vegetable oil.
Place one cold noodle sheet on the griddle and cook for 30 seconds until it softens.
Crack an egg on top of the noodle sheet and spread it evenly with a spatula. Cook for 1-2 minutes until the egg is set.
Flip the noodle sheet with the egg side down and cook for another minute.
Brush the sauce mixture generously over the noodle sheet. Add sliced sausage and sprinkle with scallions and sesame seeds.
Roll up the noodle sheet tightly using a spatula and cook for another 30 seconds.
Remove from heat and cut into bite-sized pieces. Repeat with the second noodle sheet.
Serve hot, garnished with additional scallions and sesame seeds if desired.
