粤式春季点心拼盘配凤爪与虾饺

Prepare the chicken feet (phoenix claws): Blanch chicken feet in boiling water for 5 minutes, then drain and pat dry. Deep-fry in hot oil at 180°C until golden and puffy, about 3-4 minutes. Set aside.
Braise the chicken feet: In a pot, heat 1 tablespoon oil, sauté garlic, ginger, and star anise until fragrant. Add fried chicken feet, dark soy sauce, oyster sauce, Shaoxing wine, fermented black beans, and enough water to cover. Simmer for 45 minutes until tender and flavorful. Set aside.
Make the shrimp dumpling filling: Combine chopped shrimp, minced pork fat, diced bamboo shoots, sesame oil, white pepper, and sugar in a bowl. Mix well and refrigerate for 30 minutes to firm up.
Prepare the dumpling dough: Mix wheat starch and tapioca starch in a bowl. Gradually add boiling water while stirring with chopsticks until a dough forms. Knead on a surface dusted with tapioca starch until smooth. Cover with a damp cloth.
Form the dumplings: Roll dough into a log and cut into 12 equal pieces. Roll each piece into a thin, translucent wrapper (about 8cm diameter). Place a spoonful of filling in the center, fold into a crescent shape, and pleat the edges to seal.
Steam the dim sum: Arrange dumplings and braised chicken feet in bamboo steamers lined with parchment or cabbage leaves. Steam over high heat for 8-10 minutes until dumplings are translucent and cooked through.
Serve: Garnish with fresh coriander. Serve hot in the bamboo steamers, accompanied by chili oil or soy sauce for dipping, perfect for a spring feast.
