fermented soybean paste
soy sauce
cooking wine

Cook the noodles in boiling water according to package instructions until al dente. Drain and rinse under cold water, then set aside.
Heat vegetable oil in a wok or skillet over medium heat. Add garlic and ginger, stir-fry until fragrant.
Add the diced pork belly and stir-fry until it turns golden and slightly crispy.
Add the sweet bean paste, soy sauce, cooking wine, and sugar. Stir-fry for 2-3 minutes until the paste is aromatic.
Pour in 1/2 cup of water, bring to a simmer, and cook for 5 minutes until the sauce thickens. Adjust seasoning if needed.
Place the cooked noodles in serving bowls. Top with the hot sauce, then arrange cucumber, carrot, bean sprouts, and scallions on top.
Drizzle with chili oil if desired. Mix everything together before eating.
